Crack Cookie Dough

You’re probably reading the title and wondering why a blog with “kale” in the name is writing about cookie dough.
A few years ago, I gave myself a challenge, to learn how to make unhealthy food, like slutty brownies, healthy.

I was on a mission. I scrolled through what felt like an infinite about of pins on Pinterest and one pin caught my eye. This one was a link to Chocolate Covered Katie’s blog. If you haven’t heard of this gal, crawl out from under your rock and check out her blog ASAP!!
She basically is the QUEEN of creating healthier comfort food recipes. This isn’t this “tastes good-ish but still healthy” kind of thing. Her recipes taste dank!!

Fast forward a couple years to college and I’m still on a mission to find and create these recipes.
My friend and I scanned through her website and came across her cookie dough recipe again. Naturally, we went straight to the Trader Joe’s in Madison and bought the ingredients to make her famous cookie dough from her top 5 reader’s favorite blog recipes.

Let’s be honest, 80% of the reason we bake cookies is so we can lick the bowl. #allhailsthecookiedough. So…
We blended, we ate, we conquered THE WHOLE JAR of cookie dough. Seriously, the whole jar. All at ~10:45 PM.

My cookie dough game will be forever changed after trying this recipe. I would 10/10 recommend trying this recipe to satisfy your cookie ( dough ) monster sweet tooth. Trust me.

Recipe

1 can garbanzo beans

1 T vanilla extract

1/4 cup sunflower butter

1/4 cup coconut or almond milk

1 packet of stevia

1 T maple syrup

1/3 cup rolled oats

Pinch of sea salt

1/3+ cup dark choco chips

Directions

Drain the garbanzo beans. Add all ingredients except the dark choco chips to a blender and blend until consistent. Remove mixture from blender and fold in dark choco chips. Refrigerate for 30+ minutes ( it tastes better cold ) and serve!!

I tweaked Katie’s recipe and used some of the ingredients I prefer. We were a bit skeptical at first when we herd that there were garbanzo beans in the recipe, but were pleased with the results.
