I hopped on the sweet potato toast bandwagon recently and… I’m obsessed. Its gluten free, healthy, and a fun way to mix up your AM breakfast routine.
Avocado toast topped with a sunny side up egg has been my recent obsession ( esp. after I got a whole bag of leftover avocado slices from work ). Now, I’m saying good-bye to the Ezikiel and hello to the sweet potato!
B/c I struggle with knifes, and our kitchen knife hasn’t been sharpened in *forever*, I microwave the sweet potato for a bit before cutting into ~1/4 inch slices. ALSO, make sure you crank up your toaster to high so you can get the perfect crunch. It will take around 5 minutes to toast, or until the sweet potato is cooked through.
