Roasted Butternut Squash

Don’t you know that one fast food restaurant by home that just too convenient?? It’s easier to buy meals there than make your own.
Mine happens to be a fast food style salad bar.
Because this place is right next to my apartment, I eat salads there weekly. I’m 99% sure they memorized my order – half kale, half spinach, roasted red pepper, sweet potato, edamame, asparagus, blue cheese, BBQ chicken, and lemon herb dressing ( always on the side ).
My mom would def approve of that order – it’s very nutrient dense! BUT, it also burns a hole in my wallet. TBH, I could eat that salad all day, every day, BUT spending ~$13 on a salad weekly just isn’t ideal.

I decided to recreate that salad in my apartment so I could save money and still have a satisfying, nutrient dense salad to keep me healthy at school.
While most ingredients are ready to be used after purchase, I did need to prepare some of the ingredients on my own. A family friend recommended a simple recipe for roasted butternut squash that can easily replace the sweet potatoes in my usual order.

Per usual, I bought my ingredients from Trader Joe’s! TJ’s sells butternut squash pre-cut which is so ideal for saving time and the risk of cutting off a finger.
Here’s how to prep the most addictive roasted butternut squash.

Recipe:

1 bag pre-cut butternut squash

TJ’s everyday seasoning

Directions

Drizzle EVOO on precut butternut squash. Mix in TJ’s Everyday seasoning and bake on a cookie sheet for 350 for about an hour, or until brown.

The roasted butternut squash tastes fab in salads, as a side, or just to snack on. I’ve even added the roasted butternut squash to my vodka red lentil pasta. Check out the recipe on my Insta!

While I am lucky to have easy access to healthy fast food, I do need to be smart about my money. If you are in the same boat, or if you are avoiding unhealthy fast food, try this roasted butternut squash and store it for easy access when you become hangry!
