FALL IS IN JUST A FEW DAYS!!
This means that it’s socially acceptable for my roommates and me to decorate our apartment with plastic pumpkins and ghosts. I’m not, not saying that we have been looking forward to the first day of fall since we moved into our apartment. ¯\_(ツ)_/¯
In addition to the plastic pumpkin appearance, my roommates and I have been eager to put our pumpkin purée to👏🏻 work👏🏻. However, I do have a confession. I’ve been using pumpkin purée for the past few weeks; I couldn’t wait any longer for the taste of fall!
With school, work, sorority life, and clubs starting up, I haven’t had much time to make a fancy-schmansy egg breakfast. So, I’ve been making overnight oats!
Overnight oats are a no-cook method to preparing oatmeal. Instead of cooking oatmeal on a stove or in a microwave, you mix dry rolled oats with a liquid ( & whatever else you wish to add ) and let it sit overnight.
And just like that, the oats are ready to eat – no wand waving magic is necessary!!
My brother, an investment banker in the big apple, told me that he doesn’t have much time to make breakfast. He said that he would buy a sausage, egg , & cheese breakfast sandwich on the way to work; he was looking for a breakfast that is healthier than a high sodium and high fat New York breakfast sandwich.
So, I shared this recipe with him and he approves. In the wise words of this investment banker,
“This ish is pretty solid, wee one”
“Ish” referring to the pumpkin overnight oats and “wee one” referring to me ( I’m the youngest one in the fam. )
The texture is a little diff from regular oats – overnight oats are a bit more dense ( but i like them more 🙊 ). You also can heat them up in the microwave. I prefer my overnight oats cold and on-the-go! Catch me sprinting down university with a mason jar of overnight oats in one hand and coffee in the other.
I use mason jars to prepare my overnight oats; however, you can use tupperware or any old nut jar for that extra protein !! 😛
RECIPE
1/2 cup rolled oats
1/2 cup water ( or milk or milk sub )
2 T pumpkin purée
1 T maple syrup
1 T chia seeds
splash of vanilla extract
1 tsp pumpkin spice
1 tsp cinnamon
optional : nut butter, greek yogurt, granola or collagen
Directions
Add all ingredients to a mason jar ( or old pb jar or tupperware ), shake, store overnight in your fridge. You can eat it cold or hot ( microwave ).
Soooo, if you are as busy as a New York investment banker, or you’re an college student with an overloaded schedule, try this recipe out! The investment banker’s fave additions are peanut butter and Greek yogurt but I’d prefer to add PB, collagen and granola!
