Tis the season for… PUMPKIN ENERGY BALLS!!
I don’t mean to brag but… These may be the best pumpkin balls out there. I’ve been inhaling pumpkin puree like oxygen – i’ve finished 3 cans of pumpkin puree – and I can’t stop, won’t stop.
I made a batch the other day and instead of rolling them into balls, I just ate it by the spoonful out of the tupperware. Just like peanut butter, it simply tastes better by the spoonful, ja feel?
( i guess you could sub the spoon for celery #respect )
These pumpkin balls are a great way to get PUMP-ed for the fall and don’t take much time to make. I make a big batch in the beginning of the week when I meal prep so I can have easy access to a sweet treat whenever I’m tempted to eat a pumpkin-shaped Reese’s. Reese’s will forever and always be my guilty pleasure…
I’ve truly got something going with this peanut butter thing – and guess what?? They are in these balls too! Maple syrup, the queen of sweeteners, is also found in these balls.
Maple syrup is a healthy sweetener because it is low glycemic index – AKA your body will absorb the syrup slower and you won’t have an energy crash! Perf for pumpkin energy balls, right!? It also has antioxidants which help reduce inflammation. Score..!!
I also use maple syrup in my Pumpkin Overnight Oats, Banana Protein Pancakes , Homemade Peanut Butter Cups, Coffee Overnight Oats.
Recipe
1 cup rolled oats
1/2 cup pumpkin puree
1/3 cup maple syrup
1/3 cup peanut butter
1/4 cup chia seeds
1/4 cup dark choco chips
splash vanilla extract
1/2 tsp cinnamon
1 tsp pumpkin spice
pinch of salt
Directions:
Mix all ingredients in a large bowl or tupperware. Cover the bowl with tinfoil and refrigerate for ~30 minutes. Roll into a ball and enjoy !! ( or if you’re a lazy gal like me, eat it out of the tupperware )
