Happy turkey day! I guess it is officially socially acceptable to start listening to Christmas music now… Even though I’ve been listening to my best friend’s “Mary Christmas” Spotify playlist for the past two weeks.
( Her name is Mary 😉 )
Sometimes I need Christmas music to add an extra pep in my step when walking to my dreaded O chem lecture. Nothing puts me in a good mood like rocking out in my AirPods to the Queen, Mariah Carey, singing “All I Want for Christmas”.
Whether you refuse to listen to Christmas music until after Thanksgiving or not, you can’t argue that it’s too early for delish Thanksgiving recipes! My fave is my sweet potato pancakes.
I’ve been buying bags on bags of sweet potatoes recently and I have this recipe to thank for that. These pancakes remind me of the famous Short Stack Eatery’s “Sweet Potato Oatmeal Pancakes”. Short Stack is an independent diner in Madison, WI with the dankest breakfast. Ask any student about this place, it is the go-to diner – if you can beat the line out of the door!
My sweet potato pancakes are a dumbed down version of short stacks… I like to keep these recipes as simple as possible! These are a great post-Thanksgiving healthy breakfast – especially if you have any extra sweet potatoes!
Idk about you, but I’ve got my eating pants on and I’m ready to dive head first into my Thanksgiving meal!
Here’s how ya make them:
Recipe
1 sweet potato, peeled
2 eggs
1 T rolled oats
Dash of cinnamon
Dash of nutmeg
Dash of baking soda
Ghee
Directions
Peel and chop the sweet potato. Boil for ~15 minutes. Strain out the water and mash the boiled sweet potato with a fork until consistent. Let the sweet potato cool for a few minutes ( to avoid cooking the egg with the sweet potato’s heat ), Mix in other ingredients, except ghee, until consistent. Heat ghee on a pan and add desired amount of sweet potato pancake batter to the pan. Flip when ready and serve warm.
I like to add almond butter, dark choco chips, hemp seeds, and maple syrup. They are also fun to serve in different shaped. I enjoy using my cookie cutter to cut them into hearts – I do this with all my pancake recipes!
