Egg Muffin

Happy, happy New Year!

Every 31st of January, I make my family go around the dinner table and share what their New Years resolution is. My brothers think it’s stupid, but I think it’s so important to discuss resolutions! I need a plan to reach a goal or resolution so I can keep challenging myself! My hot yoga instructor always says…

~ If it doesn’t challenge you, it doesn’t change you ~

This year, my New Year’s resolution is to continue to post weekly recipes on the blog and daily pictures on my Instagram. I strongly believe in setting up a realistic plan to achieve goals. To achieve my goal, I will plan ahead so my busy schedule at school doesn’t take over my goal of sharing recipes and pictures.

According to statista, the top three most common New Year’s resolutions for 2018 are to eat healthier, get more exercise, and save money. For this post, I’ll focus on the “eating healthier” resolution!
A wise man once said, “By failing to prepare, you are preparing to fail”. This man was Benjamin Franklin, ever heard of him?!!

So, how can we relate Franklin’s quote to one of the top three New Year’s resolutions, eating healthier?
You guessed it, by preparing. Or as us nutrition nuts like to say, “meal prepping”!

I enjoy meal prepping because it saves time and whenever I’m HANGRY, I will have a healthy snack or meal ready in the fridge!!
I often meal prep overnight oats if I’m going to have a busy week. However, if I am in the mood for something more savory, I will make egg muffins.

These egg muffins are packed with protein, vitamins, and minerals. And guess what?? Egg muffins are great for breakfast, but are also perfect for a simple snack!

Recipe:

1/2 cup red onion

1 cup mushrooms

2 large handfuls of spinach

2 T EVOO

8 eggs

Directions:

Preheat oven to 350° F. Chop red onion and mushrooms. In a large skillet, sauté the red onion, mushrooms, and spinach in EVOO. In a large bowl, whisk eggs and add sautéed ingredients. Mix until consistent. Spoon mixture in muffin cups coated with cooking spray. Bake for 20-25 minutes.

The Gorski gang enjoys snacking on these muffins with avocado, Frank’s hot sauce, Sriracha, nutritional yeast, cheese, or ketchup. I like to spread avo on a GG cracker, heat the muffins, cut them in half, and place them on top of the GG cracker.
