The work “chunky” has such a negative connotation…
… Except when it comes to Ben & Jerry’s Chunky Monkey ice cream!๐
Last semester, I had plenty of first hand experience with Ben & J’s Chunky Monkey ice cream; I took organic chemistry.
Cue the * DUN – DUN – DUNNNN *
That class was difficult to say the least. I still get #triggered when I hear or say “o-chem”. Any science major would say that it’s synonymous with “voldemort”. – I’m not that dramatic, am I?? ๐
This class relied on a curve; the key to doing well in the class was to score above the average on exams.
So essentially, you can feel like you bombed the exams and end up with an AB in the class if you score just above D average…
After my organic chemistry exams, I would pop in my AirPods, turn on a Podcast ( preferably the Lady Gang ), walk to the grocery store, and treat my sleep-deprived self to a tub of ice cream.
Every time I step foot in the frozen aisle, I would find myself standing face to face with a tub of Ben & J’s Chunky Monkey ice cream.
To eat the Ben & J’s… or to eat fro-yo??
Well, it depends how that o-chem exam went. And we can all guess how that went.
Don’t get me wrong, I L-O-V-E fro-yo, but I have a soft spot for fudge chunks and walnuts…
This semester, I once again decided to give into my Chunky Monkey cravings BUT for breakfast… as anย oatmeal.
I’m all about preventative measures and developed this recipe to do just that!
This recipe satisfies your sweet tooth and provides plenty of fiber to keep you full for that darn exam so you won’t need splurge on that Chunky Monkey.
And the best part?
It won’t make you chunky.
But maybe a lil’ย THICC??;)
Recipe
Banana Portion:
1/4 cup of oatmeal
1/2 cup almond milk
1/2 T cacao powder
splash of vanilla extract
pinch of salt
dash of cinnamon
half a packet of stevia
Chocolate Portion:
1/4 cup oatmeal
1/2 cup almond milk
other half stevia
1/2 mashed banana
splash of vanilla extract
Toppings:
dark choco
chopped walnuts
banana
Directions:
Mix the two portions’ ingredients in separate bowls. Microwave both bowls for about 1 minute, or until the oatmeal is cooked. Pour one bowl into another and stir a couple times – but don’t stir until the oatmeal is homogenous. Top off with chopped walnuts and dark choco chips
