How to Make a Quiche in a Mug

GUYS. I’M ON FREAKING CLOUD NINE.

Let me lay out the scene for you.

It’s 8:32 PM in NYC to be exact. I’m sitting across from the Whole Foods in Union Square Park. The sun is setting, musicians are playing music, I have a taco salad in my stomach, and I am relaxing after my first “official” day interning at F Factor.

The Theme from New York, New York also just happened to play next on shuffle, so I’m just RLY RLY feeling it.

Yesterday was orientation day at F Factor. I met the other interns and the F Factor dietitians, including the F Factor KWEEN herself, Tanya Zuckerbrot. I swear to God, a spotlight was shining on Tanya when she entered the room. She is glowing and the definition of fabulous. Check the dictionary.

Since moving to NYC for the summer, I also learned how small the world is….

One of the interns went to camp with me four years ago at Penn State and another attends UW Madison ( most interns are from the East coast ). Today, I learned that my roomie ( we went random ) is best friends with a girl I subletted from in Madison last summer!

Again – a freaking small world!

It’s funny, when I left the midwest, I assumed that I would leave my entire midwest life behind. Little did I know that I would have so many little connections back to home and school.

Aside from the beautiful sunset and little reminders of home, I got a SUPER exciting text today.

If you haven’t read my last post yet, you may not know that Joy Bauer is one of my RDN crushes. She is the reason I became interested in product development and why I became interested in working for Nourish!

Joy is the TODAY show dietitian, the founder of Nourish Snacks, and the healthy genius behind a few recipe books. I have her recipe books back home in Chicago and I am excited to whip up just about every recipe when I come home at the end of the summer.

Good friends might be an understatement… Megyn Kelly is one of Tanya’s clients!!

Megyn has shared that she doesn’t exercise and swears by the F-Factor diet to stay trim.

Ever since I heard that she was a F Factor gal, I have been praying that I would see her in the office one of the days I would be interning. Little did I know that I would be seeing her in her element on the Megyn Kelly show….!

The intersection of my two internships calls for one thing. A Megyn Kelly and #FFactorapproved recipe. Well, as I learned today, it would be more appropriate for step 1 if you took out the feta, but it still hammers down the dynamic duo of protein and fiber.

In the wise words of Tanya Zuckerbrot…

Recipe:

♡ Spinach

♡ 1 egg, 1 egg white

♡ 1 GG cracker – broken up

♡ 1 T milk

♡ Feta

♡ Pinch of garlic salt

Directions:

Microwave the spinach with a splash of water for about 45 seconds, or until wilted. Add in all other ingredients and mix. Microwave ingredients for about 1 minute – 1:15. Top with Frank’s hot sauce or some more GG crums. 

PS – if you are stuck with a micro-nugget kitchen this summer like me, you can EASILY make this recipe in your microwave. It’s almost like it’s made for a NYC kitchen – and we all know that those kitchens absolutely aren’t made to be used but hails says otherwise… 😉
