How to Cut Your Reeses PB Cup’s Calories in HALF

HINT : it DOESN’T involve eating half. Ain’t nobody got time for that.

It’s October. The temperature is falling and fall is in FULL swing. I’m ready to drown myself in some pumpkin spice. Like, we are talking completely immersing myself in a skinny PSL.

…not to be basic??…

Aside from the football games and the gorgeous yellow and orange leaves scattered on state street, my fave thing about this season is the food!

Tis the season for high fat, carb, & sugar desserts which can pack on the lb’s faster than you can say “pumpkin spice”, but I don’t plan on packing on the lb’s for hibernation.

Instead of creating a recipe that is nutritionally & calorically equal to a Reese’s PB cup, I decided to create a recipe that has nutrition and nearly HALF the calories. OH – and it has pumpkin in it too… 😉

I used 3 SUPER secret ingredients to cut down on the calories and add more fiber to decrease the net carbs. But here’s the thing.. I can’t keep a damn skinny secret if my life depended on it!

I made this recipe yesterday and snapchatted it to my roommates and friends next door, telling them to help themselves! I went to the library, came home a few hours later and they were ALL GONE !!

TBH, I’m not mad about it because I needed someone to taste test it, and I couldn’t have gotten a better stamp of approval than an empty plate. Also the fact that these were almost half the calories of a normal Reese’s made the girls a bit more ravenous…

Recipe:

1 T PB2

  • 1 T peanut butter
  • 1 T honest syrup
  • 2 T pumpkin
  • 1/8 tsp pumpkin spice
  • 1/8 tsp nutmeg
  • 1/8 tsp cinnamon
  • 1/8 tsp vanilla
  • 4 ounces Lily’s Dark Chocolate (~3/4 cup)
Directions:

In a medium bowl, mix 1 T of water into the PB2. Mix in all other ingredients except for the dark chocolate. In another medium bowl, melt the dark chocolate. Spray 12 mini baking cups with coconut oil spray and drizzle half of the melted dark chocolate for the first layer of the cup. Next, spoon in about 1/2 tsp of the pumpkin mix on top of the first dark chocolate layer. Top the pumpkin mix with the second half of the melted dark chocolate. Freeze then serve!
