APPLE CINNAMON CRANBERRY BARS

HEY FAM BAM!

Today I am in home stretch!!

I’m studying for my last final then I am heading back home to Chicago for winter break.

“Studying” as in “write a blog post about a delish recipe at the library with my Clinical Nutri Sci notes scattered around me…”

If you know me well, you know that I cope with stress in a few ways:

  1. Exercise
  2. Lavender candles and essential oil
  3. BAKING.

I’m also inspired at the most inconvenient times – ie. when I am studying. This recipe idea popped into my head when I was studying for my Food Science – Food Service Operation exam… Nothing really gets the baking wheels turning like reviewing microbial contaminants in a high volume foodservice operation… amiright??! :’)

I wanted to share yet another comfort food recipe that is SO ideal when you come home from finals and do NOTHING but sit by the fire, watch Netflix, and cuddle up with comfort food ( and your cheetah barefoot dreams blanket ) for about a week.

This recipe was created with healthy ingredients and flavor top of mind. I wanted to make a dessert that was fit for this season. Cranberries are a Christmas time staple and apples are just getting out of season. This recipe is so ideal for the last few apples in your basket because they are baked; you don’t need a perfectly crisp apple to make the perfect Apple Cinnamon Cranberry Bar.

Oh, and the apple pairs SO well with cranberries and cinnamon. YUM.

Recipe:

2 packets Cinnamon Spice Multigrain Hot Cereal 

3/4 cup oat flour

1 cup coconut sugar

2 tsp baking powder

1/2 tsp salt 

1/2 tsp cinnamon

1/4 tsp nutmeg

1/3 cup coconut oil

1/3 cup non fat greek yogurt

3 eggs

1 tsp vanilla

1 apple

1/2 cup cranberries 

Directions:

Preheat the oven to 350°F. Line a 9×9 baking pan with parchment paper. In a large bowl, mix all dry ingredients. In a medium bowl, mix all wet ingredients. Stir the wet ingredients into the dry ingredient bowl. Dice the apple and fold the diced apple and cranberries into the batter. Pour the mix into the baking pan and bake for 25-35 minutes at 350°F.

I personally enjoy these VERY undercooked… When I took the pan out of the oven, it smelled SO cinnamony and delicious that I couldn’t resist and I took a spoonful from the center ¯\_(ツ)_/¯.
