SIMPLE, SKINNY CHICKEN RICE BUTTER LETTUCE TACOS

GREETING FROM FLO-RIDA!!!

EEEP I am so excited to FINALLY get some vitamin d and sun… Two things that are a bit foreign to me. It seems like FOREVER since I’ve gotten my daily dose of vitamin d ( aside from my vitamin d supplements !! ) or seen even a sliver of sunlight.

I decided to indulge in a crazy senior year spring break in Florida… with my parents, g-parents, aunt, uncle, and cousin; I knew that dietetic internship interviews would be occurring around this time, so it would be best if I were not partying by the pool with a tequila sunrise in hand 😜

I developed this recipe before I left for vacation and high key – I kinda regret not bringing any Banza rice with me!

I like this rice option because it contains significantly more fiber than white and brown rice!! Isn’t that shocking??

Banza rice contains 3x the protein, 2x the fiber, and nearly 30% fewer net carbs!

When you make these tacos, make sure you use Butter or Boston lettuce cups; they are SO much softer than other lettuce cup and work a lot better as a tortilla replacement – TRUST. ME.

Final tip: Add chicken bouillon to your water when preparing the Banza rice. It’s a game changer…

Recipe

  • 3/4 cup sliced bell peppers
  • 1/4 cup diced red onion
  • 3 ounces shredded chicken
  • 1/4 cup prepared Banza rice
  • 2 T mild salsa
  • 2 T black beans
  • 1/4 tsp mild chili powder
  • 3 large Boston lettuce cups
  • olive oil spray
  • shredded cheddar cheese – to sprinkle on top

Directions

  1. Spray a medium size pan with olive oil spray and sauté the bell pepper and red onion.
  2. When the red onion becomes somewhat translucent, stir in chicken, rice, salsa, black beans, and chili powder.
  3. Top the Boston lettuce cups with the mixture.
  4. Sprinkle on shredded cheddar cheese
