LOW CARB PIZZA BAGELS FOR THE GIRL WHO LOVES BAGEL BITES

MAMA MIA, LET’S TALK ABOUT PIZZAAAAA… BAGELS !!

Little hails wasn’t excited to go to soccer practice after school, no. She was excited to walk into a kitchen that smelled of authentic, gourmet, BAGEL BITES.

Remember those cute little pizza bagel bites that were a staple in literally every elementary student’s fridge?

As a kid, I was obsessed with pizza. If you told my mom that her daughter – who ate pizza dipped in Ranch and topped with goldfish for brekkie – would study dietetics and have a nutrition blog, she would say you’re crazy…

But no seriously, I ate pizza for breakfast, lunch and dinner. Cold, hot, plain, immersed in ranch dressing, in a pizza slice, or in my favorite form… IN A BAGEL !!

It’s kinda like the Spongebob shaped mac’n’cheese – food just tastes better when it’s in a different shape – ya know?

Luckily, I’ve found a healthier form of this Bagel Bite!

These AHTK pizza bagels are only 120 calories and have only 2.5 net carbs/ bagel, compared to bagel bites which have 31 net carbs. My bagels also have a whopping 8 grams of protein in one bagel! There is more protein in one bagel than there is in one serving of bagel bites.

Recipe

BAGEL

  • 1/2 cup almond flour
  • 1/2 cup wheat bran
  • 2 T ground flax meal
  • 1/4 tsp garlic and onion powder
  • 1/2 tsp baking soda
  • 1 T vinegar
  • 4 egg whites (1/2 cup)
  • 1 whole egg

PIZZA TOPPING

  • 6 T Raos sauce
  • 6 T low fat mozzarella
  • Garlic & Onion powder to taste
  • Optional: Red chili flake

Directions

  1. Preheat oven to 350°F
  2. Mix all ( bagel ) wet ingredients in a bowl. Set aside.
  3. Mix all ( bagel ) dry ingredients in a medium-large bowl.
  4. Add wet ingredients to dry and mix until well combined.
  5. Spray your Silicone Bagel Tray with cooking spray
  6. Evenly distribute the batter to the 6 areas
  7. Bake for 15-20 minutes. I recommend under baking if you choose to add the mozzarella and sauce 
  8. Add sauce + mozzarella + seasonings and bake until the cheese is slightly brown

Adulting is just doing the same things you did as a kid with an ~adult twist~… AMIRIGHT??

OH AND BTW – if you want to dip your bae-goal in ranch, I HIGHLY recommend dipping it in a yogurt based ranch dressing like Bolthouse.
