Energy balls are the absolute PERFECT snack to grab when you’re running out the door. BUT, what happens when you’re running out the door and forgot your sacred cup of coffee??
NOT okay.
This energy ball is perfect because it gives you a little bit of caffeine while providing a punch of energy from the other ingredients.
Recipe
- 1/3 cup rolled oats
- 2 T instant coffee (I used WAKA coffee)
- 1/3 cup Lilys sugar free chocolate chips
- 1/2-1 cup drippy almond butter
- 1/4 cup Daily Uplifter
- 2 T ground flaxseed meal
- 2 T white chia seeds
- 1/2 tsp monk fruit sweetener (0 calorie 0 glycemic)
- 1/4 tsp cinnamon
NOTES:
- The amount of almond butter you need varies based on the amount of oil in the jar. Some almond butters contain more oil than others and may be needed in smaller quantities to bind the ingredients.
- Spray the measuring cup with olive oil or coconut oil spray before measuring the almond butter. This lubricates the measuring cup so the almond butter just slides out of the cup and you don’t need to scrap it out!
