I’m going to take a break – just for a hot sec – from basic b*tch spooky szn to talk about football season.
Ya know, like the only time it’s socially acceptable to drink a few vodka sodas limes at 11 AM??
It’s not only socially acceptable, but HIGHLY ENCOURAGED to pair that 11 AM vodka soda with buffalo wings, burgers, or fried cheese curds.
I’ve become an expert in cleaning off a buffalo wing chicken bone after being critiqued by the b-dubs experts ( AKA my brothers ) and have developed a deep love for all things buffalo.
Legit – I live by the frank’s slogan. I put that shit on EVERYTHING.
I was inspired by Alysia’s ( from @purelypope ) chimichanga recipe.
Chimichangas are essentially a deep fried burrito. YUM. But, those fat and calories aren’t good for my heart health or waistline. She air fried hers, so I was inspire to air fry mine. It gives it such a warm and crunchy feel to it that makes it taste indulgent, BUT IT ISN’T !!!
Another hot tip – pair the chick buffalo chimichanga with yogurt-based ranch dressing if you get a little “Franks happy” like me. I only added 1/2 – 1 T of franks to this recipe, but would normally use a higher elbow if I were making it just for me. I like my franks pour how I like my vodka soda pour, ya know? 😉
Recipe
- 1/4 cup chopped celery
- 1/4 cup diced white onion
- 1/4 cup slivered carrots
- splash of avocado oil
- 1/2 – 1 T franks red hot
- 3 ounces of shredded chicken
- 2 mini high fiber wrap ( i like this brand )
- avocado oil
Optional:
- yogurt based ranch dressing ( i like this brand )
- blue cheese crumbles
Instructions
- In a medium size pan, sauté celery, white onion, and slivered carrots in avocado oil.
- Add shredded chicken and franks red hot.
- Divide the filling between the two tortillas and sprinkle some blue cheese on the filling. Wrap it up.
- Spray the wraps with olive oil spray.
- Air fry at 300° for 5-7 minutes ( depends on how crispy you want it ).
- Dip in your yogurt based ranch and DEVOUR !!
