You know what I really love?
A simple recipe.
Like, one that doesn’t require much thought. Something I can make while listening to a podcast and just kinda… Zone out to. Like the – coming home from my dietetic internship a bit exhausted and ready to blow off some steam in the kitchen without requiring much effort kinda vibes.
This recipe is just that.
It doesn’t require you to pre-heat the oven or make sure that your food doesn’t burn in the oven. All you need is 7 ingredients, a blender ( i use my mom’s vitamix – HIGHLY recommend ), and a freezer. It is just that simple.
WELL, I would recommend a cookie scoop because it makes the whole situation seem a bit more profesh, but it isn’t required!
Recipe
COOKIES
- 1 cup oats
- 1/2 cup pitted dates
- 1/2 cup cashew butter
- 1/3 cup pumpkin puree
- 1 tsp vanilla
- 1/2 tsp pumpkin spice
- 1/2 tsp cinnamon
CHOCOLATE (optional)
- Dark chocolate
- 2 tsp coconut oil
Directions:
- Add oats to a blender and blend into a powder. Add dates ( MAKE SURE YOU TAKE OUT THE PITS !! ), blendy blend blend.
- Blend in cashew butter, pumpkin, vanilla, pumpkin spice, and cinnamon until well combined.
- Mold the dough with a cookie scoop and place on parchment paper.
- Freeze.
- Optional *but highly recommended* – coat half the cookie in melted chocolate + coconut oil. Freeze again!
