I’m always looking for a FUN way to satisfy my sweet tooth while packing in the nutrients… I like to get some bang for each bite – ya know??
This recipe is the PERF way to satisfy your sweet tooth with nutrient dense ingredients
- CACAO POWDER: antioxidants for protecting cells from damage caused by free radicals
- ALMOND BUTTER: heart healthy fats, bone supporting calcium, and mood-boosting magnesium
- OAT FLOUR: more fiber than regular flour
- CRANBERRIES: good source of collagen-stimulating vitamin C
These muffins are healthy, but portion control is KEY!! Luckily, they are already portioned out in the silicone muffin molds 😉
Recipe
- 1 cup almond butter (drippy kind)
- 2/3 cup maple syrup (i like to use this low sugar, low carb brand)
- 2 eggs
- 1 tsp vanilla
- Splash of apple cider vinegar
- 3/4 cup blanched almond flour
- 3/4 cup oat flour
- 1/3 cup cacao powder
- 1.5 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 cup cranberries + additional for topping
- 1/2 cup dark chocolate chips + additional for topping
- pinch of salt
Instructions
- Preheat oven to 350°F
- In a large bowl, mix almond butter, maple syrup, eggs, vanilla, and apple cider vinegar
- In a medium bowl, mix almond flour, oat flour, cacao powder, baking soda, cinnamon, and salt
- Fold wet ingredients into dry ingredients until well combined
- Fold in chocolate chips and cranberries
- Spray muffin mold with coconut oil then add additional chocolate chips + cranberries if desired ( it looks a lot cuter with toppings;) )
- Bake 18-22 mins, or until toothpick comes out clean when inserted
Pro tips:
- Spray your measuring cup with coconut oil spray before measuring the almond butter or maple syrup
- Place a rubber jar opener under your bowl to keep the bowl in place when you stir
- Use a silicone muffin mold instead of a tin so you can pop out the muffins SANS the crumbles
