NO BAKE PB CHOCOLATE COOKIES

More often than not, my sweet tooth lacks the patience to wait for my oven to preheat and the *baked goodies* to bake and cool off.

There’s a special, delicate balance when it comes to baking cookies…

We don’t want eat raw cookie dough and risk getting sick from salmonella, but we also don’t want to get third degree burn from the 375° melted chocolate chips – ya know?

THAT is why we love NO BAKE cookies.

First, you don’t need to wait 75 years for your oven to preheat!

Second, you CAN eat the dough w/o the risk of getting sick. –just watch be mindful of your portions!!

Third, you won’t burn your tongue. — IN FACT, your tastebuds will be ON POINT because the flaked salt enhances the cookie’s flavors. Also, adding salt to recipes also helps the dark chocolate and cacao taste less bitter!

If you don’t like dark chocolate, this is a great hack to help you choose antioxidant rich chocolate instead of regular milk chocolate.

These cookies are one of my fave desserts ATM because they aren’t too sweet and they have the perfect balance of sweet and salty.

If you prefer your desserts more sweet, feel free to add more maple syrup!

Recipe

  • 1/2  cup almond flour
  • 1/2 cup oat flour
  • 1/4 cup cacao powder
  • 1/2 cup maple syrup (this low sugar brand)
  • 1 1/4 cup drippy PB (you can find the kind I use HERE)
  • 1 tsp vanilla extract
  • >70% cacao dark choco
  • 1 tsp coconut oil
  • Flaky salt

Instructions

  1. I find it helpful to mix the dry (almond flour, oat flour, cacao powder) and wet ingredients (maple syrup, drippy PB, vanilla extract) separately then combine –if you’re feeling lazy, you can throw it all in a big bowl and mix
  2. Use a cookie scoop to form balls
  3. Flatten in crisscross pattern with fork on wax paper
  4. Freeze the cookies
  5. Microwave the dark choco with coconut oil in rounds of 15 seconds until melted –DON’T OVER MICROWAVE THE DARK CHOCO. we don’t want burnt chocolate !!
  6. Dip the cookies in the melted dark choco
  7. Sprinkle the flaky salt on the melted chocolate –because the cookies are frozen, the chocolate hardens quickly. Top the cookies with salt ASAP so it sticks to the chocolate before it hardens 
  8. Store in fridge or freezer!
