Chicken parm, eggplant parm, air fried eggplant fries ( with parm )… we LOVE our parm dishes on AHTK.
I believe that we should never say never when it comes to food. How boring would that be?
I mean… A life without chicken or eggplant parm… I DON’T WANNA KNOW WHAT THAT LOOKS LIKE.
I’ve been on an eggplant kick recently and wish I hopped on this eggplant bandwagon earlier. I made these anchovy parm eggplant fries… OHMIGOD. To die for… But, I digress.
A common misconception is that eggplant parm is the healthier option, but that’s NOT necessarily true!! Interestingly enough, eggplant parm can have more calories than chicken parm because eggplant parm soaks in the oils more than chicken. Depending on how the chef prepares these parm dishes, you might be better off with the chicken parm!
That doesn’t mean that it’s the end of our eggplant parm days, we just gotta take this back to our kitchen.
Making food at home allows you to micromanage the ingredients.
The key is to use an air fryer and spray on the olive oil. This enables you to control how much oil goes into the recipe and how many calories it ends up having.
When I got home after rotations one day, my dad noted that he tried my leftover eggplant parm and LOVES IT! ( Bob is my designated recipe taster)
Bob gave this recipe his stamp of approval and you will to. Here’s how ya make it:
Recipe
- 1 large eggplant
- 3/4 cup pulverized GG crackers
- AHTK tip: pulverize a packet of GG crackers and keep them in your pantry so they are ready to go!!
- 1/4 cup ground parmesan cheese
- 1 tsp dried basil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1/2 tsp ground pepper
- 3 eggs
- 1/2 cup nonfat milk
- Olive oil spray
- 3 cups marinara sauce
- **AHTK tip: check the nutrition label. Aim for less than 6 grams of sugar per serving. I love this brand.
- Shredded low fat mozzarella
Instructions
- Salt both sides of your eggplant slices and place them in a large colander in the sink. Let the liquid drain for 45 mins-1 hour.
- When your eggplant slices have finished draining liquid, brush off the excess salt, as you don’t want it to be too salty!
- In a shallow plate, mix pulverized gg crackers, ground parmesan cheese, dried basil, garlic powder, onion powder, salt, and ground pepper.
- Whisk eggs and milk in the a medium-large bowl.
- Dip both sides of eggplant slice into milk/egg mixture then cover with pulverized GG mix.
- Place the breaded eggplants in the air fryer basket – don’t let them touch!!
- Cook at 370°F for ~10 minutes
- Top each eggplant round with marinara sauce and a sprinkle of shredded mozzarella cheese.
- Place basket back in the air fryer and cook until cheese has started to melt, 1 to 2 minutes.
