Seriously guys –it is SO YUM.
I’m not GF or DF but I wouldn’t be against it if all DF/GF food tasted like this.
I also like this recipe because it contains no animal protein! I won’t get on my soapbox about protein portion distortion ( again 😳 )…

Although this recipe contains no meat, it is still packed with filling protein! The secret… CASHEWS!!
Cashews are a great source of:
- ZINC for immune function 🙌🏻
- COPPER for energy production💥
- MAGNESIUM for muscle function 💪🏼
How do we make this magical dish?!
Recipe:
- 1/2 cup cashews
- 1 T lemon juice
- 1/2 cup chicken broth
- 1 T parsley
- 3/4 T minced garlic
- 2 T nutritional yeast or grated parm
- S&P to taste
- 1/2 medium yellow onion, chopped
- 1 cup mushrooms, sliced
- Olive oil spray
Instructions:
- Soak cashews in water overnight
- Drain cashews
- Blend cashews, lemon juice, chicken broth, parsley, garlic, grated parmesan, and S&P in a blender until well combined.
- Prepare chicken with desired seasoning –I like S&P and paprika
- Spray a pan with olive oil spray and cook chicken
- In another pan, saute onions and mushrooms
- Add Palmini pasta and blended alfredo sauce to onion and mushrooms. Mix and heat until well combined
- Top with chick
- DEVOUR!!
