This choco chunk cashew butter swirl banana bread is MY CHILD. MY BABY. The most beautiful thing I’ve created in the kale kitchen as of late.
It took ONE recipe trial.
ONE !!
I think the kale kitchen gods are throwing me a bone because another recipe I’ve been working on ( blueb muffins ) needed 3 trials.
I’ve been baking up a STORM because I’m testing out a magical, new flour.
DRUM ROLL PLS…
This flour is called “TIGER NUT FLOUR”
Tiger nut flour is RICH in:
- FIBER for digestive health and reducing bad cholesterol
- IRON for energy
- VITAMIN E for antioxidant power
Tiger nut flour is the key ingredient to making this BFY banana bread.
AHTK banana bread contains:

- 💥 36% LESS SUGAR THAN THE TRADITIONAL RECIPE !!
Recipe
Dry:
- 1 cup tigernut flour
- 1/3 cup coconut flour
- 1/3 cup monk fruit sweetener
- 2 tsp cinnamon
- 2 tsp baking soda
- 1/8 tsp salt
- 3/4 cup chocolate chunks (set aside some for topping)
Wet:
- 3 medium ripe bananas
- 2 eggs
- 1 tsp vanilla extract
- 1 T coconut oil, melted
- 1/2 cup creamy cashew butter (MUST be the drippy kind!!)
- Coconut oil spray
Directions
- Preheat oven to 375°F.
- Mix dry ingredients (except chocolate chunks) in a large mixing bowl.
- Blend bananas, eggs, vanilla extract, and melted coconut oil in a blender.
- Fold wet mixture into dry mixture. Mix as little as possible.
- Fold in dark chocolate chunks. Leave some for topping!
- Line a loaf tin with parchment paper.
- Pour the batter into the loaf tin.
- Drizzle cashew butter on top and swirl a knife through.
- Sprinkle additional chocolate chunks on top!
- Bake for ~30-35 minutes.
- Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
- Find a super secret hiding spot to store your AHTK banana bread so Cheryl doesn’t eat it all. 😳
- Serves 12.

Can we use almond or coconut flour instead of tiger flour if that is all we have available?

i haven’t tried swapping out the tigernut flour for almond flour, but it may work! let me know if you try it and how it turns out!:)
