I prepare two batches of these cookies…
FIRST: The OG AHTK Chai Cookie recipe. The OG recipe that I (or… Cheryl(s)??) accidentally threw out…
SECOND: AHTK Chai Cookies 2.0… I added almond butter to the recipe and it gave the recipe an amazing texture. I’ll take the recipe disposal as a blessing in disguise. So, thank you, Cheryl 😉
BOTH times I baked the chai cookies, the kale kitchen smelled sweet, spicy, and slightly flowery –SO COMFORTING !!
If you’re like me and LOVE a super flavorful cookie, this recipe is for you. There are so many flavorful spices that make this cookie taste indulgent and rich.
*BUT, it isn’t indulgent!!!
The primary ingredient in this recipe is almonds, which are found in the almond flour and almond butter.
Almonds are great source of:
- Vitamin E: immune function AND protecting cells from damaging effects of free radicals
- Heart healthy fats
- Fiber for digestive & gut health
This cookie is a multitasker – you satisfy your cravings WHILE consuming protective and beneficial nutrients!!
Recipe
- 1 cup almond flour
- 1 tbsp cinnamon
- 2 tsp nutmeg
- 2 tsp ginger
- 2 tsp cardamom
- 1 tsp baking soda
- 1 cup almond butter
- 1/3 cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 cup dark chocolate chips
- Flaked salt
How To
- Preheat oven to 350°F and prepare a cookie sheet with parchment paper.
- Whisk almond flour, cinnamon, nutmeg, ginger, cardamom, and baking soda in a large bowl. Make a well in the middle of the dry mixture and set aside.
- Mix almond butter, maple syrup, egg, and vanilla extract in a medium bowl.
- Pour liquid mixture into the “well” in the dry ingredients. Fold until well combined.
- Fold in dark chocolate chips.
- Use a cookie scoop to scoop the cookie dough on the parchment covered cookie sheet.
- Top cookies with flaked salt.
- Bake 15 minutes and allow cookies to cool off on a cooling rack.
