It’s tough to practice discipline during quarantine because we are craving comfort food and only a few steps away from the pantry and fridge!
I have the perfect solution.
Cauli crust pizza… but ITTY BITTY!!
These AHTK Skinny Mini Cauliflower Pizza Cups satisfy our craving for comfort food while providing us with some nutrition!
My former RD boss, Dawn Jackson Blatner, shared her secret to creating a perfect snack: pair PRODUCE with a PROTEIN to keep you full. Produce has water and fiber to get you full and protein has staying power to keep you full.
Compared to Pizza Bagels, AHTK Skinny Mini Cauliflower Pizza Cups have:
- 70% fewer carbs/serving
- 135% more protein/serving
Ingredients
- 2 cups frozen cauliflower rice (defrost in microwave and strain all liquid)
- 1 egg
- 1/2 cup grated parmesan cheese
- 1 tbsp Italian seasoning
- S&P to taste
- 1/2 cup red onion, diced
- 1 cup mushroom, diced
- 1 tbsp olive oil
- 1/2 cup marinara sauce
- 1/2 cup low-fat shredded mozzarella
Instructions
- Preheat oven to 400°F
- In a small bowl, whisk egg.
- In a large bowl, mix cauliflower rice, whisked egg, grated parmesan cheese, Italian seasoning, and S&P until well-combined.
- Grease a silicone muffin mold and divide the cauliflower rice mixture into 8 muffin molds. Press down with the back of a spoon.
- Bake cauliflower cups for 25-30 minutes.
- Sauté red onion and mushroom in a medium-size pan with olive oil.
- When cauliflower cups are cooled, scoop 1 tbsp of marinara sauce into each cup.
- Top marinara sauce with 1 tbsp of shredded mozzarella/cup and sautéed red onion and mushroom.
- Bake for an additional 8-12 minutes.
Notes: serves 4.
