ALL HAIL(S) THE KALE (AND SALMON CAESAR SALAD W/ SWEET POTATO FRIES)
AHTK is WAAAAY overdue for a kale recipe.
I’m obsessed with this salad because it scratches my itch for a boujee & fatty caesar salad, BUT it has a fraction of the fat and calories.

Pro tip:
- Chop salad with kitchen scissors
- Prep your AHTK Protein Packed Caesar Dressing ahead of time
- Allow the kale to marinate in the dressing before serving
Here’s how to make it:
Ingredients
- AHTK Protein Packed Caesar Dressing
- 2 cups chopped kale
- 2 tbsp shaved parm
- 2 tbsp avocado
- 1/2 sweet potato
- pepitas for topping
- 4 oz salmon filet
- olive oil spray
- salt and pepper
Instructions
Salmon:
- Preheat oven to 350°F
- Season salmon with S&P
- Bake salmon 15-20 minutes, or until done
Air Fried Sweet Potato Fries:
- Cut sweet potato into sticks with a sharp knife
- Spray sweet potato sticks with olive oil spray
- Season with S&P
- Spread an even layer of sweet potato fries in air fryer basket
- Cook at 375° for 5-10 minutes, flip fries, then cook 5-10 more minutes
Salad:
- Massage the chopped kale with AHTK Protein Packed Caesar Dressing
- Prepare plate with dressing-coasted kale, baked salmon, and air fried sweet potato fries. Top with flaked parmesan cheese and pepitas.
